Low Carb Cheesy Jalapeno Chicken & Cauliflower Potatoes Recipe
Tonight’s dinner was to say the least absolutely SCRUMPTIOUS-I just know you will enjoy it just as much as we did!!
Cheesy Jalapeno Chicken
5 All Natural Chicken Breasts
5 pieces precooked bacon
8 oz cream cheese
2 fresh jalapenos, seeded & chopped
Seasoning Salt or S&P to taste
Preheat oven at 325. Mix together cream cheese & jalapenos, stir well. Slit chicken breasts and scoop cheese mixture into slit (it will be overflowing and that’s ok) top with 1 piece of bacon and add s&p to taste. Bake at 30-45 mins.
1 head cauliflower
2-4 tbsp heavy cream
2-4 tbsp butter
1/2 cup sharp cheddar cheese
Salt & Pepper to taste
Chop up cauliflower into medium size pieces, place into a microwave safe bowl and pour in 2 tbsp heavy cream & 2tbsp butter. Microwave 5 mins, take out, stir so that the cream/butter coats most of the cauliflower. Microwave for another 5 to 6 mins. Add in 1/2 cup of cheese. Use a food processor (I used my Nutribullet) or high speed blender to “mash” the potatoes, this only takes a few mins depending on what you’re using, when finished it will be pureed into a smooth consistency, looking just like regular potatoes. Pour into serving bowl and add in extra 2tbsp of cream & butter if desired, salt & pepper to taste. Serve immediately and enjoy!
