Zucchini Lasanga


I made this last night for dinner and it was fantastic- the entire family loved it! It was just as delicious to use the zucchini in place of the traditional lasagna noodles and way less fat and carbs. So you could enjoy the cheesy dish without the guilt!


  • 1lb lean ground meat (I used venison)
  • 1 large zucchini, sliced like lasagna noodles
  • 1/2 onion, diced
  • 1tbsp minced garlic
  • 16oz can organic diced tomatoes
  • 6oz can organic tomato paste
  • 8oz ricotta cheese
  • 2 cups mozzarella cheese
  • 1 cup water
  • salt & pepper to taste


Preheat oven to 350. Cook meat, onions and garlic, drain grease. Mix in diced tomatoes, tomato paste, water and salt & pepper heat on high for about 5 mins or so. In a separate bowl mix ricotta and 1 cup mozzarella.Use a  13×9 pan,to  layer the meat, zucchini, cheese mixture, then top with remaining meat, cheese mixture and zucchini, top with left over cheese. Bake covered for 30 mins, then serve. Enjoy!
