Low Carb Cheesy Chicken & Broccoli Casserole Recipe

I made this for dinner last night and it literally MELTS in your mouth, it was so delicious even my picky 4 year old loved it! 

 

Ingredients: 

  • 1lb all natural chicken breasts, chopped
  • 1 head organic broccoli, chopped
  • 1/2 cup chopped onion
  • 1/2 cup chopped mushrooms
  • 1 tbsp minced garlic
  • 1 cup all natural ricotta cheese
  • 1/4 cup all natural sour cream
  • 2 cups shredded mozzarella cheese
  • seasoned salt or salt & pepper to taste
  • 1/2 cup water

Directions:

Preheat oven to 350.

Place broccoli, onions, mushrooms, minced garlic and water into frying pan, allow to cook until broccoli softens (about 10 mins or so).

In a separate bowl mix the chicken, ricotta cheese, sour cream, mozzarella cheese & salt and pepper into a bowl, stir well until chicken is coated.

Once done, drain any excess water from the veggie mixture, then add it into the chicken and gently mix together.

Pour into a 9×13 baking pan and bake 30-40 mins, you will know it’s done when the cheese starts to brown around the edges. Makes 6 servings.

  1. I had all ingredients for this soup and was really looking fwd to it. Forgot to take chicken out of freezer! Used 2 cans of chicken breast meat, well drained. Everyone loved it!!

    • Hey Shay!
      This recipe is on the higher fat and protein side with low carbs. It’s perfect for a low carb diet but if you’re not doing low carb you might want to reduce the cheeses or use fat free to cut calories. I’m not sure on the calories, it depends on your servings and how you decide to lighten it up. It’s been awhile since I’ve made it. 😊

  2. Kristy, I don’t know about low cal or low carbs, whatever starts your boat. I made this recipe with normal ingredients and it was delightfully…..extremely robust flavor and well liked by my family. Will definitely make it again!!! Thanks

  3. I’m confused, do you cook the chicken first? In the ingredient list, it says cooked chicken but in comments, I saw that you don’t cook the chicken first.

  4. I’m dairy free and Kite Hill Ricotta cheese is going for 10.47 at the local shop so I subbed and made this with onion and chive pseudo cream cheese (4.47) Delicious and at a six dollar savings, I’m a happy happy girl!
