Low Carb Eggplant Pizza ๐Ÿ†๐Ÿ•

  
I’ve recently started eating Low Carb/Keto lifestyle and I am loving it but there are days when I miss PIZZA ๐Ÿ•๐Ÿ•. It’s one of my favorite foods, so I decided to give this a go and see how it turned out to my surprise it was super good and my kids loved it! 

Ingredients:

Makes 6 personal pizzas

  • 1 eggplant
  • Mozzarella cheese
  • Low carb pizza sauce (or make your own)
  • Pepperonis
  • Optional veggies 

Directions:

Cut eggplant into thick slices, sprinkle with sea salt and lay on top of paper towels for about 20-25 mins. This gets the excess water out so they won’t be super soggy and gross. Preheat oven to 400, and bake 15-20 mins. Remove and add sauce, cheese and toppings, broil for 2-5 minutes or until cheese is melted. 

Carb Count 5.5 carbs per pizza 

  • Eggplant: 4.5
  • Pizza Sauce (I did about 2 tbsp): 1
  • Mozzarella: 0
  • Pepperoni: 0

  1. I made these tonight and the eggplant was soggy and less great. I salted and let them sit for twenty minutes prior to baking them.

    Everytime I’ve had eggplant it’s been the same consistency. Maybe that is just how it is. Any suggestions?
