Turkey & Fruit Salad 🥗 


I love fruit in my salads, they make it so delicious! 😋

Here’s what you need:

  • Handful of Spring Mix Salad
  • 4 pieces of oven roasted turkey lunch meat, chopped
  • 1 mozzarella string cheese, chopped
  • 4-5 grapes, halved
  • 3 strawberries, chopped
  • Skinny Girl Raspberry Vinegarette 
  • Optional: Almonds or Walnuts (I didn’t add nuts to this salad but I often do for extra protein)

Lay down spring mix, meat, cheese, fruits and drizzle with dressing. Enjoy! 😍

Weight Watchers Tator Tot Casserole


Makes 6 Servings, 10 smart points

Family favorite without the guilt! 

Here’s what you need:

  • 1lb lean ground beef (93/7)
  • 16 oz tator tots 
  • 1 32 oz can 98% fat free cream of mushroom soup
  • 1 can green beans, drained
  • 1 tbsp minced garlic

Preheat oven to 350. Cook beef, drain grease. Add in soup and garlic, cook until warm and “runny”. Pour into a 9×13 baking dish, carefully fold in green beans, top with tator tots and bake for 40-45 mins. 

Low Carb Pizza Casserole 🍕


So, this was supposed to be some extravagant layered pizza with perfect slices, but I was lacking some ingredients and threw this together and hoped it was edible. Surprisingly it was really good, both of my kids liked it! Score! 

Here’s what you need:

  • 1lb ground Italian sausage 
  • 16 oz low carb pizza sauce (Ragu)
  • 1 onion, chopped 
  • 1 green bell pepper, chopped
  • 2 cups shredded mozzarella 
  • 20 (more or less) pepperonis 
  • salt and pepper to taste

Preheat oven to 350. Sautée onion and green pepper, add it sausage, cook and stir in pizza sauce. Place in baking dish and top with cheese and cheese pepperoni, bake 30 mins.

Healthy Crockpot Mexican Chicken Chili


Here’s what you need:

  • 3 skinless boneless chicken breast 
  • 2 cans rotel
  • 8oz tomato sauce
  • 1 can corn (or frozen corn)
  • 1 can seasoned black beans
  • 1 can dark red kidney beans (drained/rinsed)
  • 4 oz can green chiles chopped
  • 1 onion chopped
  • 1 packet taco seasoning 

Place chicken breasts down firsts to crockpot  then pour all ingredients over it and stir well. Cook covered on high 4-5 hours or on low for 8 hours. Shred chicken and stir well before serving.

Top with sour cream (or Greek yogurt), Mexican cheese or sharp cheddar, salsa and/or guacamole for added flavor!

Low Carb Spaghetti 

Normally I’m not a spaghetti squash fan but this was really delicious!

Spaghetti Squash Spaghetti 

6-8 servings 

  • 1 Spaghetti squash
  • 1lb lean ground beef 93/7  
  • 1 32oz jar of spaghetti sauce
  • 1 tbsp minced garlic
  • 1/2 cup mushrooms, chopped  
  • Mozzarella to top

Preheat oven to 400 degrees. Half spaghetti squash, clean out, pour water into squash until it’s about half way full bake 1 hour. Remove and shred with fork. Place in strainer to drain excess water. 

*Cook meat sauce about 15 mins before your squash is done baking. Cook meat along with minced garlic and mushrooms, drain grease and add sauce and let simmer. Pour into spaghetti squash, stir, serve and top with mozzarella!

🔹This would also be fantastic with diced zucchini and onions in it! 

Low Carb Fried Rice

Low Carb Fried Rice 

  • 1 head of cauliflower 
  • 8oz steak (or desired meat)
  • 1 bag frozen peas/carrots
  • 2 eggs
  • 1 tbsp garlic
  • 1 tbsp olive oil
  • 3 tbsp soy sauce 


Chop cauliflower, place in food processor until it looks like rice. Pour olive oil and garlic into pan, sautée and place chopped meat into pan, cook thoroughly, add peas/carrots until thawed add cauliflower. Scramble and cook eggs, pour into cauliflower mixture, add soy sauce and stir well. Top with salt/pepper or desired seasonings. 

Serves 6-8.

Mexican Chicken Potato Bake

So I was heading home after walking the track and I wanted Mexican, chicken and potatoes. I had all the ingredients and I was not sure what exactly to make when I decided to put everything together and see how it tastes, lol. Thankfully it was delicious and my family loved it! 


  • 2 chicken breasts, chopped
  • 3 potatoes
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can rotel
  • 1 taco seasoning packet
  • 1-2 cups cheese (fat free, low fat or regular)
  • 1-2tbsp olive oil 
  • Sour cream to top


Preheat oven to 400. Chop up potatoes into bite size chunks, toss into ziploc bag or sealed contain with olive oil, shake until coated and bake for 1 hour.

Cut up chicken, cook in large pan then and add all other ingredients cook until all is warm. Pour into potatoes and top with cheese. Bake 10 mins or until cheese is melted.  Top with sour cream and salsa.
