Black Bean Zucchini Rice Skillet


Super easy, only 5 ingredients and a great Meatless Monday option! This keeps me full without feeling super heavy as well.

  • 🔥4 Weight Watchers Points Plus 
  • Makes 6 servings

Here’s what you need: 

  • 1/2 cup uncooked brown rice 
  • 1 can black beans, drained/rinsed
  • 1 can Rotel tomatoes
  • 1 large zucchini 
  • 1/2 shredded cheddar cheese 

Use spray oil to grease pan, add zucchini, sautée for 5 minutes.

Add in rice, tomatoes, black beans and 1/2 cup water. 

Stir well. Cover and let simmer until rice is cooked. 

Tip: I used to boil in a bag rice (removed from bag and poured into pan) because it cooks faster so it took me about 10 minutes to simmer. 

Once ready top with cheese.

 Taco Pizza 🌮🍕


Did I just say Tacos 🌮 AND Pizza 🍕? Yep! Let me tell you.. this is really good, my picky kids like it and lately it’s been a challenge finding anything they “like”! This is so simple to make and quick too, this would also be great to take to a party /potluck. 



Here’s what you need:

  • 2 8oz tubes of crescent roll dough 
  • 1lb ground beef (or turkey, chicken, whatever you fancy)
  • 1 packet taco season (or make your own)
  • 1 package cream cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded lettuce 
  • 1 small tomato, chopped

Note: Olives, onions, avocados, would also be great toppings! 

Preheat oven to 350. Spray olive oil/cooking spray or lightly grease baking sheet and unroll crescents, use your hands to mend them together. Bake 5-8 minutes or until golden brown. Take out of oven and allow to cool. (I was in a hurry so I put mine in the freezer for about 5 minutes).

In a bowl combine cream cheese and sour cream, with a mixer mix until spreadable. Set in fridge to chill while you are cooking the ground beef.

Cook the ground beef, drain grease, add in Taco season, mix well and allow to cook another 2-5 minutes. 

Spread cream cheese mixture onto the crust, then top with ground beef, cheeses, lettuce and tomatoes. 

Cut into 8 large pieces or 12 smaller ones!

Crockpot Sausage, Cabbage & Potaoes (Weight Watchers Friendly)

  

It’s summer and it’s HOT out so when I don’t have to use my stove I’m one happy mom! 

Crockpot Sausage, Cabbage & Potatoes 

  • Serves 6
  • 6 points per serving 

Here’s what you need:

  • 1 head of cabbage, chopped
  • 14oz Turkey Smoked Sausage, chopped
  • 6 small Idaho potatoes, halved
  • Seasoned salt or salt & pepper to taste

Fill Crockpot half way full with water and add all ingredients, stir and cook on high for 3 hours or low on 6 hours. Serve.

Notes: If you want a low carb option trade in the potatoes for radishes! Cooking time may vary so eyeball it. 

4 Ingredient Sausage and Potato Crockpot Meal

  

Super easy, budget friendly and super yummy! Here’s what you need:

  • 32oz bag of frozen hash browns 
  • Kielbasa or sausage of your choice, chopped
  • 8-16oz sharp cheddar cheese
  • 1 can cream of chicken soup
  • Salt and pepper to taste

Place all ingredients into Crockpot, stir and cook on high for 3 hours. 

  

Add more cheese to top if desired after done cooking.

Turkey & Fruit Salad 🥗 

  

I love fruit in my salads, they make it so delicious! 😋

Here’s what you need:

  • Handful of Spring Mix Salad
  • 4 pieces of oven roasted turkey lunch meat, chopped
  • 1 mozzarella string cheese, chopped
  • 4-5 grapes, halved
  • 3 strawberries, chopped
  • Skinny Girl Raspberry Vinegarette 
  • Optional: Almonds or Walnuts (I didn’t add nuts to this salad but I often do for extra protein)

Lay down spring mix, meat, cheese, fruits and drizzle with dressing. Enjoy! 😍

Weight Watchers Tator Tot Casserole

  

Makes 6 Servings, 10 smart points

Family favorite without the guilt! 

Here’s what you need:

  • 1lb lean ground beef (93/7)
  • 16 oz tator tots 
  • 1 32 oz can 98% fat free cream of mushroom soup
  • 1 can green beans, drained
  • 1 tbsp minced garlic

Preheat oven to 350. Cook beef, drain grease. Add in soup and garlic, cook until warm and “runny”. Pour into a 9×13 baking dish, carefully fold in green beans, top with tator tots and bake for 40-45 mins. 

Low Carb Pizza Casserole 🍕

  

So, this was supposed to be some extravagant layered pizza with perfect slices, but I was lacking some ingredients and threw this together and hoped it was edible. Surprisingly it was really good, both of my kids liked it! Score! 

Here’s what you need:

  • 1lb ground Italian sausage 
  • 16 oz low carb pizza sauce (Ragu)
  • 1 onion, chopped 
  • 1 green bell pepper, chopped
  • 2 cups shredded mozzarella 
  • 20 (more or less) pepperonis 
  • salt and pepper to taste

Preheat oven to 350. Sautée onion and green pepper, add it sausage, cook and stir in pizza sauce. Place in baking dish and top with cheese and cheese pepperoni, bake 30 mins.
