Weight Watchers Tator Tot Casserole

  

Makes 6 Servings, 10 smart points

Family favorite without the guilt! 

Here’s what you need:

  • 1lb lean ground beef (93/7)
  • 16 oz tator tots 
  • 1 32 oz can 98% fat free cream of mushroom soup
  • 1 can green beans, drained
  • 1 tbsp minced garlic

Preheat oven to 350. Cook beef, drain grease. Add in soup and garlic, cook until warm and “runny”. Pour into a 9×13 baking dish, carefully fold in green beans, top with tator tots and bake for 40-45 mins. 

Broccoli Cheese Soup (Low Carb/Weight Watchers Friendly)


Easy to make and kid approved!

Details:

  • 4.3 Net Carbs per Serving
  • 7 Weight Watchers Smart Points
  • (Omit all cheese and soup is 1 smart point)
  • 4 servings 

Ingredients:

  • 4 cups broccoli, chopped
  • 3 1/2 cups chicken broth
  • 1 tbsp minced garlic
  • 2 cups finely shredded cheddar cheese 
  • salt/pepper or seasoned salt to taste

Directions:

Pour broth, broccoli and garlic into soup pan, cook on high until boiling then simmer until broccoli is softened. Stir in cheese and seasoned salt. Once cheese is melted to a liquid it’s finished.

Mexicali Casserole

  

Ingredients:

  • 1 pound lean ground beef or turkey
  • 1.5 cups chopped onions
  • 1 green pepper, chopped
  • 1 tbsp minced garlic 
  • 1 packet taco season
  • 1 can dark red kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 14ounce can diced tomatoes undrained
  • 2/3 cup jasmine or brown rice 
  • 1 cup water
  • 1/2 cup sharp cheddar cheese shredded (or more to taste)

Directions:

Preheat oven to 375°, and a large skillet coat with cooking spray or coconut oil cook the meat, onions, garlic and green pepper until meat is done and vegetables are tender. Drain grease and add and remainder ingredients(minus the cheese) stir.

Transfer into 9 x 13 baking dish, cover and bake for 55 minutes or until the rice is tender. Remove, sprinkle with cheese and place in oven until cheese is melted.

Top with your favorite  condiments, we used salsa and sour cream!

Sweet Potato Banana Bites

I was scrolling through pinterest when I came across this recipe, it looks like it’s so easy to make with only 4 ingredients– Sweet potatoes, bananas, eggs & peanut butter. You can add in other goodies for added flavor like chocolate chips, nuts and spices. I can’t wait to try these!

Mom’s Favorite Chili

  
Mom’s Favorite Chili

  • 1lb lean ground beef
  • 2 16oz cans of chili ready tomatoes
  • 1 16oz can black beans 
  • 1 16oz can red kidney beans
  • 1 16oz can pinto beans
  • 1 16oz  can cream style corn
  • 1 packet mild chili season

Cook ground beef, drain grease, drain/rinse all beans and pour all ingredients into large Dutch oven and cook on low-medium for 30 mins. 🍴Serves 8

🌟For crock pot:

Pour all ingredients into crock pot and cook on low 8 hours.

Best Banana Bread Ever!

  
Super easy and super yummy! 😍

Ingredients:

  • 3 ripe bananas
  • 1.5 cups flour (whole wheat, coconut whichever you prefer)
  • 1 egg
  • 1/4 cup melted butter (I used salted)
  • 1 cup sugar (or substitute)
  • 1 tsp baking soda 
  • 1 tsp salt

Preheat oven to 325. Mash bananas, mix in egg, butter and sugar, mix well. In seperate bowl mix in flour, salt and baking soda, mix well and pour into batter. Mix well and pour into greased loaf pan. Bake 60-65 mins.

Mexican Chicken Potato Bake

  
So I was heading home after walking the track and I wanted Mexican, chicken and potatoes. I had all the ingredients and I was not sure what exactly to make when I decided to put everything together and see how it tastes, lol. Thankfully it was delicious and my family loved it! 

Ingredients:

  • 2 chicken breasts, chopped
  • 3 potatoes
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can rotel
  • 1 taco seasoning packet
  • 1-2 cups cheese (fat free, low fat or regular)
  • 1-2tbsp olive oil 
  • Sour cream to top

Directions:

Preheat oven to 400. Chop up potatoes into bite size chunks, toss into ziploc bag or sealed contain with olive oil, shake until coated and bake for 1 hour.

Cut up chicken, cook in large pan then and add all other ingredients cook until all is warm. Pour into potatoes and top with cheese. Bake 10 mins or until cheese is melted.  Top with sour cream and salsa.
