This was my lunch today– very filling and delicious, so as you know baked Cauliflower is low carb and 0 Weight Watchers points.. woo hoo! Paired with a 1/2 cup to tomato soup (I used canned) you have yourself a filling 4 point lunch. You’re welcome! ☺️😉
Here’s what you need to do:
Wash and cut up Cauliflower, spray with cooking spray, sprinkle salt and pepper or if you like some spice red pepper flakes do the trick. Bake at 350 for 20-25 mins. My kids loved today’s lunch and they didn’t even know how healthy it was, mom win!
Low Carb Reuben Casserole, this recipe is extremely easy to make and is a great option for those who love a good Reuben Sandwich but don’t want all those carbs along with it!
- 1lb ground beef
- 24oz sauerkraut, drained
- 1 tsp minced garlic
- 1 cup sour cream
- 1/2 cup low carb or sugar free ketchup
- salt & pepper
- 1 1/2- 2 cups swiss cheese
Preheat oven to 350. Place ground beef and minced garlic into skillet, cook, drain fat. Add in sauerkraut into beef, cook until warmed up. Mix sour cream, salt & pepper and ketchup into a large bowl, mix well. Pour beef into bowl with mixture stir until all meat is covered. Pour into baking dish (I used 7X11), top with cheese and bake 20-25 mins or until edges are bubbly. Enjoy!
