Hello Fresh Meal Review 👌🏻💯

  

I recently received a meal service box from Hello Fresh (healthy recipes delivered to your door, you pick your menu and serving size, they have different plans to choose from to meet your needs, it also ships free) and I was really nervous to see how I’d like it and if my food would actually arrive cold or not. 😬 It arrived on the day as shipping noted and to my surprised I opened everything up and it was all packaged very nicely, separated by recipes into boxes 📦 (if you’re big on organizing then this will make you happy). Everything was very cold and looked wonderful! 

The box came with ingredient/recipe cards for each meal as well. I received 2 meals: Shrimp and Sausage Gumbo and Holy Moly Spinach Artichoke Ravoli. 

  

Spinach Ravoli was filling and very good, and easy to make! 

  

Gumbo was SO good, it was very different and full of flavor, also easy to make! 

Overall I really loved this box, you can skip meals and order when you want so you’re not locked in and if it’s not for you it takes 30 seconds to cancel on line!

Mexican Chicken Potato Bake

  
So I was heading home after walking the track and I wanted Mexican, chicken and potatoes. I had all the ingredients and I was not sure what exactly to make when I decided to put everything together and see how it tastes, lol. Thankfully it was delicious and my family loved it! 

Ingredients:

  • 2 chicken breasts, chopped
  • 3 potatoes
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can rotel
  • 1 taco seasoning packet
  • 1-2 cups cheese (fat free, low fat or regular)
  • 1-2tbsp olive oil 
  • Sour cream to top

Directions:

Preheat oven to 400. Chop up potatoes into bite size chunks, toss into ziploc bag or sealed contain with olive oil, shake until coated and bake for 1 hour.

Cut up chicken, cook in large pan then and add all other ingredients cook until all is warm. Pour into potatoes and top with cheese. Bake 10 mins or until cheese is melted.  Top with sour cream and salsa.

Fiesta Stuffed Sweet Potatoes

I have to admit, I literally savored and inhaled every single bite (minus the skin) of this sweet potato dish it was that good! 

Fiesta Stuffed Sweet Potatoes

6 Servings

Ingredients: 

  • 6 sweet potatoes (or 3 large ones halved)
  • 1lb ground beef
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can tomatoes and green chiles, drained
  • 1/2  red onion, chopped
  • 1 packet Taco Seasoning

Optional Toppings:

  • Sour Cream (or plain greek yogurt)
  • Avocado
  • Pineapple Salsa (we use Trader Joes brand)
  • Cheese

Directions:

Poke holes in sweet potatoes with a fork and cook each sweet potato according to your microwave directions( for example mine was 6 and half minutes for one potato). If you do not use a microwave then bake your sweet potatoes in the oven accordingly. When potatoes are almost completely done cooking, place ground beef, onions, black beans, corn, tomatoes & green chiles in large skillet. Once meat is thoroughly cooked, drain grease and stir in taco seasoning packet. Split open sweet potatoes, pour in meat mixture and dress with desired toppings. Enjoy!

Chocolate Peanut Butter Banana Smoothie

I don’t know about you but I LOVE smoothies! It is the best way to sneak in fruits and veggies into your day.. and especially wonderful when your kiddo begs you for a healthy smoothie! This is one of my favorite smoothies that we make, it gives me a pep in my step in the morning and keeps me full until lunch time.

Chocolate Peanut Butter Banana Smoothie

Ingredients: 

  • 1/2 frozen banana
  • handful of frozen blueberries
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tbsp flax/chia seed ground mix
  • 4-5 raw organic goji berries
  • 1 tbsp all natural peanut butter
  • 1 scoop Amazing Grass Green Superfood Chocolate 

NOTES: I make the same identical smoothie for my kiddo and I use Amazing Grass Kidz Superfood in Outrageous Chocolate Flavor and blend in separate Nutribullet container. 

Directions: 

Place all ingredients into Nutribullet (or blender of choice), blend and enjoy

Chocolate Covered Peanut Butter and Banana Sandwiches

Craving chocolate? Peanut Butter? Then you MUST try these, they are fantastic and your family will love them!

Chocolate Covered Peanut Butter & Banana Sandwiches:

Ingredients

  • 1/2 cup semi sweet chocolate chips (Enjoy Life brand)
  • 2 bananas
  • 1/4 cup all natural peanut butter (or more to taste)
  • 2 tbsp organic extra virgin coconut oil (Natures Way or Nutiva are great to use)
  • 1-2 tbsp Toppings: Crushed nuts or toffee bits. Optional

Directions:

Slice bananas and place peanut butter in center, make into sandwiches. Place on wax or parchment paper and place into freezer until frozen. Usually 1-2 hours. Once frozen melt  chocolate chips and coconut oil in microwave in 30 second increments, remove and stir each time, depending on wattage it may take 1-2 mins to melt completely. Drizzle chocolate over all of the sandwiches and sprinkle crushed nuts or desired toppings onto the sandwiches. Once chocolate hardens, serve. Store leftovers (if you have any) if the freezer in air tight container.
