I was so impressed with tonight’s dinner I had to blog it 😉.
Here’s what you need:
Weight Watchers Points are for 1 stuffed breast, 2 cups broccoli and 1 cup orzo with 1 tbsp light butter 10 points, add extra points if using real butter.
- 2 chicken breast (boneless skinless)
- 4 tbsp cream cheese
- 2 sargento Colby jack cheese sticks
- Fresh broccoli (1-2 heads)
- Preheat oven to 350
- Butterfly chicken breasts, then close them back up and cut in half so you have 4 pieces.
- Add 1 tbsp of cream cheese and half a cheese stick to each breast.
- Top with salt & pepper or any seasoned salt.
- Bake in oven 30 mins or until chicken is done.
✔️For Orzo, place dry orzo in a pot, pour enough water to cover it all about an inch or two over. Boil until softened, drain, sprinkle with salt and pepper, drizzle with butter.
And so it begins … today.. our Walking Challenge! We’re on our way to walk 160 miles in just 61 days, can we do it? Yes, yes we can! I am REALLY excited about this challenge, I absolutely love walking, it’s my favorite form of cardio and a total stress reliever and it’s even more fun when it’s a challenge! We will start this first week with 10 miles this week, you can walk, run, jog, hit the treadmill or a walking path- whatever you want to do (feel free to add in extra miles as well) just keep track of your totals. Cheesecake is by far my absolute favorite dessert and I am in love with this super easy low carb modification, it honestly tastes just as good and is the perfect snack when you’re having a sweet craving. Low Carb Mini Cheesecakes
♦️6 Carbs per cheesecake
- Note: *Using a different sugar substitute will lower the carb intake. Xylitol is on the higher side of the carb scale.
- 16oz cream cheese
- 2 eggs
- 1/2 cup xylitol (or your favorite sweetener will do)
- 1 tbsp pure vanilla extract
Preheat oven to 350 degrees. Mix all ingredients into large bowl, use hand mixer and blend well. Pour into 12 cupcake liners. Bake for 20 mins. Allow to cool, then eat. Store all left overs in the fridge.
I finally tried Cream Cheese Pancakes (low carb & gluten free) this morning and they did NOT disappoint! I was actually surprised at how good they tasted compared to regular pancakes and my picky 4 year old loved them and didn’t notice a difference, score for me!

- 1 packet stevia (or any) sweetener (I don’t use any artificial sweeteners so I drizzled in organic honey)
